What is Göbek?

In the production of raki, during the distillation process, the middle part obtained while the product flows from the copper stills is considered the essence of raki and is commonly referred to as 'göbek' in Turkish.

In the distillation of the still, the beginning and end parts of the flow are separated, while the middle part is taken as raki. In the world, distilled beverages are produced using a similar method, and this middle part is referred to as 'heart'.

All raki is obtained from this middle product, so it can be defined as göbek. The quality of the product plays an important role in determining the ratio to be taken from the middle part, that is, the göbek.
